Ingredients:
2 lbs halibut fillets (cut into 1” cubes)
½ cup olive oil
2 large onions chopped
1 cup sliced fresh mushrooms
2 cloves garlic chopped
2 cups rice of choice, raw
1 lg can tomato diced
4 cups water
¼ cup fresh cilantro
1 ½ teaspoon sea salt
½ teaspoon fresh ground black pepper
1 lb Alaska spot prawns (or shrimp)
1 lb shredded Mexican cheese
Directions:
Heat olive oil in large frying pan, saute onion and garlic, add rice and mushrooms, cook until rice browns.
Add water and tomatoes, bring to a boil, cover and simmer 20 min. Add Cilantro, salt, pepper, halibut and shrimp, cover and simmer additional 5 minutes or until water is absorbed. Remove from heat, add cheese and cover until melted.
