Easy Rockfish Cioppino

1lb Yelloweye Rockfish, chunked
2 sliced Carrots
2 tbsp minced parsley
2 tbsp minced garlic
1/2 cup chopped onion
2 tbsp flour
1/4 cup olive oil
1/2 tsp salt
1/2 tsp pepper
1 can 14 oz diced tomatoes
1 can 14 oz tomato sauce
2 cups hot water


Saute Carrots, garlic, onion & parsley in oil until tender. Add flour, salt & pepper, stirring over low heat until it thickens a bit, add diced tomatoes, tomato sauce and water. Cover and simmer 20 min. Add rockfish chunks, simmer additional 30-40 minutes. Serve with garlic bread or sourdough baguette.
