Finicky Salmon Burgers

3 lbs salmon burger (Coho or King)
2 eggs
1/2 onion, chopped
2 red or yellow peppers, chopped
1 cup fresh mushrooms, chopped
8 oz Panko bread crumbs

Mix all together in large mixing bowl, then form into patties and place on cookie sheet. Season top with Johnnies salmon seasoning and pepper to taste. Heat large frying pan on medium heat with 2 tablespoons olive oil and 1/4 cube butter. Place patties seasoned side down in frying pan and season top. Cook until lightly browned on bottom (about 3-5 min on medium heat) and turn.. Add cheese if desired,I prefer Pepperjack. Patties will be done when browned on both sides. Serves 8. Delicious!
