King Salmon, also known as Chinook, is considered by many the most delicious of salmons. Chinook is prized for its thick, buttery smooth texture and large soft flakes. King salmon holds up well to a variety of cooking methods. Because it has a higher fat content than other salmons, it is less prone to overcooking and tolerates higher cooking temperatures without drying out. Chinook is the largest and rarest of the pacific salmons and the highest in omega-3’s, in part because they favor the deep, colder parts of the ocean.
