Sablefish tips are the meat cut from the collar of the fish. Sablefish, also known as Black Cod or Butterfish, are not actually a cod. Sablefish have a white flesh with high oil content and large delicate flakes. They are highly valued for their intensely rich, buttery taste and texture. It is an easy fish to cook and is great grilled, fried, smoked or raw (sushi).
